Tasty Easy Lunch
I popped the Sprouts Thai Red Curry with Vegetables and Jasmine Rice into the microwave for a quick lunch today and my whole kitchen started smelling amazing within minutes. The scent of coconut milk and spices is honestly the best part and it made me so hungry before I even took a bite. I was worried it might be too spicy for me but the heat level is actually pretty mild and comfortable which lets you really taste the lemongrass and ginger notes in the sauce. The jasmine rice cooked up surprisingly fluffy for a packaged meal and absorbed that creamy red sauce perfectly. It really hits the spot when you want something warm and comforting without having to order takeout or spend time cooking from scratch.
While the flavor is definitely there I think the texture of the vegetables could be a little better. The bamboo shoots and bell peppers were a bit soft for my liking so I wish they had kept a little more crunch to them to balance out the soft rice. If I bought this again I would probably toss in some fresh snap peas or maybe some tofu to bulk it up a bit since the portion is on the lighter side. Despite the softer veggies it is still a solid option for a fast meal that tastes fresh and not overly processed. It is definitely something I will keep in the freezer for those days when I need a decent meal in under five minutes.
